8種類の食用豆類に含まれるポリフェノールと抗酸化活性 OAK

8種類の食用豆類に含まれるポリフェノールと抗酸化活性を比較した。豆類からの連続的な3段階の抽出法は,実験室で次のようにして行った。豆類に温水(50℃)を加え,5時間浸漬(抽出液1)し,その後種皮のみを採取して水を加え,1時間,加熱抽出した(抽出液2)。最後に,加熱抽出後の種皮に5%トリフルオロ酢酸含有のエタノールを加えてさらに1時間,種皮に強く結合しているポリフェノールを加熱抽出した(抽出液3)。全ての抽出液にポリフェノールを含んでいたが,含まれるポリフェノール量は,豆類種実の大小や種皮色との間で相関関係は認められなかった。アズキおよび赤インゲンマメの抽出液1には,ポリフェノールが多く溶出され,特にアズキの抗酸化活性が最も高かった。抽出液2にポリフェノールが多く溶出された豆類は,コクリョクトウ,リョクトウ,ソラマメ,赤インゲンマメであり,エンドウやダイズのそれはごく微量であった。また,抽出液3にポリフェノールを多く含んでいたのは,コクリョクトウ,リョクトウ,クロダイズ,赤インゲンマメ,ソラマメで,種皮に強く結合したポリフェノールを多く含有する豆類といえる。抽出液1に含まれるポリフェノールの熱安定性とpH安定性を検討したところ,4時間の加熱を続けても,豆類抽出液の活性低下はほとんど認められなかった。また,ダイズ,エンドウ,アズキ,コクリョクトウ抽出液1(pH6.5)の抗酸化活性は,pH2.0では同じ~若干上昇したが,pH10.0では低下した。塩基性条件でのアズキとエンドウの活性低下は,特に顕著であった。また,ダイズ,クロダイズおよびリョクトウ抽出液1のβ-カロチン退色抑制能は低かったが,赤インゲンマメ,コクリョクトウ,エンドウ,アズキのそれは高かった。 The antioxidative activities...

ABSTRACT A study was conducted to evaluate the effect of chlorogenic acid (ChA) added pre-cooling and its combination with caffeine added during warming on cooled-stored boar semen parameters. Ten ejaculates were diluted in commercial extender with or without 4.5mg/ml ChA and stored at 15°C. After 0, 24 and 72 hours of storage, aliquots of these doses were taken and incubated at 37°C in the presence or absence of 8.0mM caffeine. Semen quality was evaluated after 10 and 120 minutes of incubation. Annual Variations in the Anthocyanin Contents of Blueberry Fruit Grown in Hokkaido OAK

アントシアニンを多く含有する果物は、健康機能性や色素作用により、非常に高く評価されている。2003 年の冷害年を含む2002~2004 年の摘期に収穫された6 品種の粒大の異なるブルーベリー果実を用いて、それらに含まれるアントシアニン含量を比較検討した。収穫年度により、果実重量あたりのアントシアニン含量は顕著に異なっていた。また、小~中粒果実 (ウェイマウス、ノースランド、ジューン、パトリオット)のアントシアニン含量は、栽培環境に影響を受けにくいが、大粒果実 (ハーバート、ブルーレイ)のそれは栽培環境に影響を受け易いことが示唆された。特に冷害年である2003年のノースランド果実のアントシアニンおよびポリフェノール含量は、他年度のそれらよりも顕著に高く、低温環境においてアントシアニン合成が増加する特徴を持っていると推定された。また、2004年、5 月と6 月の平均気温が長沼町よりも若干低い砂原町で生育したブルーベリー果実の粒大は小さかったが、果実100g 当りのアントシアニン量は高かった。今後、粒大が大きく、アントシアニン含量の高い品種の選抜・育成が期待される。

Abstract: The objective of this work was to evaluate the effect of the Y-trellis (YT) and vertical shoot-positioned (VSP) training systems on the incidence and severity of Botrytis cinerea, on cluster compactness, and total polyphenol (TP) contents of 'Sauvignon Blanc' grapevine in the municipality of São Joaquim, in the state of Santa Catarina, Brazil. Field trials were carried out in a randomized complete block design during the 2013/2014 and 2014/2015 crop seasons, with assessments performed at harvest. In México, banana (Musa sp.) varieties ate used for human consumption as well as for traditional medicine, but the literature lacks information on local diversity and functional justification for their use. Three varieties of dessert bananas (Valery, Morado, and Enano) and one cooking banana (Macho) were collected in a commercial farm in Tuxtepec, Oaxaca, México, at the agronomic maturity stage, and they were physically and chemically evaluated. A random sampling, ANOVA, and Tukey tests were used. Polyphenol content, functionalities and seed coat of 30 kinds of seeds OAK

30種の種子に含まれるポリフェノール含量と1,1-dipheny-2-picrylhydrazyl(DPPH) 消去活性、 還元力および百粒重、種皮色との関連性について検討した。30種の種子のポリフェノール含量とDPPH 消去活性および還元力との間には、それぞれ高い正の相関関係のあることを明らかにした。 また、赤色系種子のみ明度(L*値)、赤味度(a*値)、黄味度(b*値)、彩度(C*値) とポリフェノール含量との間にそれぞれ高い正の相関性のあること、茶、黄色系種子ではL*値とポリフェノール含量との間に高い負の相関性のあることを明らかにした。調査した種子の中でレンゲ、アカクローバ(メジウム)、ダッタンソバ、ナタネはポリフェノール含量が高いが、百粒重は小さい。 手亡、黒金時、白小豆、アカネ大納言、ユキシズカ、ヘアリーベッチ、アワ、ヒエ、蕎麦、黒ゴマのポリフェノール含量と百粒重はともに低い値であった。 Thirty kinds of seeds, we concerning the correlation of polyphenol content and DPPH radical scavenging, reducing power, weight of hundred seeds, coat color. Properties of the Lipids and Polyphenols in Wild Rice (Zizania palustris) Seeds OAK

ワイルドライス(Zizania palustris L.、K2 品種)は、炭水化物(68%)が主要成分のデンプン性種子で、他にタンパク質14%、灰分2%、脂質1.4%などを含有していた。また、種実に含まれる脂質は、中性脂質が75%で、リン脂質15%と糖脂質10%から成り、中性脂質の主要クラスはトリアシルグリセロール(TG)で、全脂質の68%を占めていた。品種間における脂質成分と組成割合には、ほとんど差異は認められなかった。TG の主要分子種は、パルミトイルジリノレン(PLL)、パルミトイルリノレオイルリノレニン(PLLn)、ジリノレオイルリノレニン(LLLn)、トリリノレン(LLL)、オレオイルリノレオイルリノレニン(OLLn)などで60%を占め、他に少なくとも11 種類の分子種が認められた。また、TG の構成脂肪酸位置分析により、sn-1、3 位には16:0、18:2および18:3 が、sn-2 位には18:2、18:3、18:1 および16:0 が認められた。また、4 種類のステロール脂質;遊離ステロール(FS)、ステロールエステル(SE)、ステリルグリコシド(SG)、アシルステリルグリコシド(ASG)の構成デスメチルステロール(DeMS)は、全てシトステロール>カンペステロール>スチグマステロールの順であったが、SE の構成デスメチルステロールであるスチグマステロールの割合は、他クラスのそれに比べて約10%程度低い値を示した。また、種実のポリフェノール含量は0.04%-0.06%、種皮のそれは0.18%-0.28%であり、品種により含量が顕著に異なっていた。しかし、種実ポリフェノール組成は、品種間では同様で、分子量が534 及び564の2 種類の構造未知のポリフェノールであった。

ABSTRACT Tannins represent one of the most abundant polyphenolic compounds in plants. Tannins exist as a multitude of chemically unique entities in nature. The most commonly occurring tannins are typically divided into two major classes based on chemical structure: hydrolysable (HT) or condensed tannins (CT). Hydrolysable tannins are esters of gallic or ellagic acid linked to a polyol core, typically glucose. Condensed tannins or proanthocyanidins consist of flavan-3-ol subunits linked together to form oligomers and polymers. Unequal distribution of pH, polyphenol content and polyphenol oxidase activity within Japanese processing potato tubers OAK

The pH, polyphenol content and polyphenol oxidase (PPO) activity in stem end, middle, and bud end of Norin No. 1 potatoes, one of processing varieties in Japan, were measured to investigate their respective distributions. The stem end area had a higher pH and PPO activity in the three areas. This result points out that careful harvesting and postharvest handling are needed especially at the stem end area of potatoes because of its high PPO activity.

Abstract: The objective of this work was to validate a fast method with low-solvent use, for the analysis of trans-resveratrol and quercetin in red wines. The wines were prepared, using a classical method, from the grape (Vitis vinifera) cultivars Cabernet Franc, Cabernet Sauvignon, Malbec, Merlot, Petit Verdot, Pinot Noir, Ruby Cabernet, Syrah, Tannat, and Tempranillo. Samples were filtered and analyzed by high-pressure liquid chromatography (HPLC) with a diode array detector (DAD), at 306 and 371 nm, for trans-resveratrol and quercetin, respectively.
